Warming Soups To Make For Your Next Team Lunch

Fall is here, and it is the ideal time to enjoy some beautiful soups with some fresh crusty bread. Soup is the ideal meal for after a cold and drizzly day, especially in the office, and the recipes we have for you here are ideal for the season. 

Here are some amazing soups you can make this season to warm the cockles of your hearts whether your work in a law firm like Rockwell Legal Group, a marketing agency, or a media group. These soups are easy to make the night before, bring into the office, and will keep everyone warm at your company lunch. 

Pumpkin soup 

How could we talk about fall without mentioning pumpkins? Pumpkins are iconic in the fall season and making them into an amazing soup is the perfect way to welcome in the season. 

Ingredients: 

  • 800g pumpkin and mixed squash 
  • 1 large parsnip 
  • 1 large carrot 
  • 1 red bell pepper
  • 1 potato 
  • 1 white onion 
  • 1 tsp cumin 
  • 1 tsp paprika 
  • 1 tsp mixed herbs 
  • 1 tsp chilli flakes 
  • 1 tsp allspice 
  • 500ml tomato passata
  • 200ml water 
  1. Dice the pumpkins and mixed squash, leaving the skin on for extra nutrition. 
  2. Chop up the other vegetables. 
  3. Add all of your vegetables to a baking sheet along with the spices, salt and pepper, and olive oil. 
  4. Bake for 45 minutes at 220C. 
  5. Once baked through, add to a pan along with the passata and water. Simmer for 10 minutes
  6. Blend until smooth. 
  7. Serve with a crusty bread roll. 

Carrot and coriander soup 

Carrot and coriander soup is a wonderful recipe for the autumn and you can pair this with crusty bread or some freshly made simple flatbreads. 

Ingredients: 

  • 500g carrots 
  • 1 bunch coriander 
  • 1 potato 
  • 1 white onion 
  • 1 tbsp honey 
  • 500ml vegetable stock 
  • 1 tbsp cumin 
  1. In a large saucepan, heat up some oil. Chop your onion and add into the pan, sweating for 5-8 minutes. Chop the carrots, potato, and coriander. 
  2. Add all of the ingredients to the pan, bring to a boil, and simmer for 30 minutes. 
  3. Taste and season, then blend until smooth. Adjust sweetness with honey and add more coriander if needed. 

Tomato and basil soup 

A classic soup recipe that is easily one of the most popular in the world – and it’s easy to see why. Served with a crusty roll or a grilled cheese – tomato soup is always a great option and one that is ideal for freezing and makes a great starter for a dinner party in the autumn. 

Ingredients: 

  • 500g tomatoes, various types and sizes 
  • 2 tbsp tomato purée 
  • 400g chopped tomatoes 
  • 1 tbsp Worcestershire sauce 
  • Zest of 1 orange 
  • 1 white onion 
  • 2 cloves garlic 
  • Bunch of basil 
  • 100ml double cream 
  1. Chop up your onion, garlic, and tomatoes and add to a baking sheet with salt and pepper and oil. Bake for 40 minutes until beautiful and tender. 
  2. Add to a pan, along with half of your basil, Worcestershire sauce, orange zest, and tomato puree. Stir through for 1-2 minutes. 
  3. Add chopped tomatoes, add the rest of the basil and a lid, and simmer for 30 minutes. 
  4. Blend until smooth. 
  5. Add your double cream if you want a more creamy flavour – you can also leave this out if you like. 
  6. Serve with your favourite grilled cheese or crusty bread.
